We wanted to buy a camcorder but while researching for them, a good camcorder came out close to $700. So instead, I decided to sell my existing digital SLR canon camera and buy the newest Canon Rebel T2i that has 1080p (or HD Video) capability built into it. Also, I have been meaning to buy another better quality zoom lens since I am in the process of starting a photography blog. I just got the camera today and completely forgot that I had to post a recipe today. Since I was without a camera for almost 2 weeks and was scrambling to find a recipe that I had made but not posted yet. Luckily I found a very easy recipe that I had made with black eyed peas but never posted.
I decided to cook with black eyed peas (no, not the hip hop group) but with peas that are delicious, healthy and really tasty. There are a variety of ways to make this. I decided to keep this recipe really simple, quick and easy. Another time, I am going to post a black eyes peas curry recipe that is a little more involved than this recipe. For now, please enjoy this simple and quick recipe and let me know if it came out.
Spicy Black Eyed Peas
1 cup black eyed peas, soaked in bowl of water overnight
2 tablespoon oil
1 medium onion, finely chopped
2 cloves garlic
1/4 teaspoon red chili powder
1 serrano chili
2 tablespoon coriander powder
1/2 teaspoon salt
4 tablespoon cilantro, chopped fine
Heat oil in a medium pan and fry the onions till they are translucent. Add garlic and fry for 20 seconds. Then add the red chili powder, serrano chili and coriander powder and fry for 30 seconds or so. Then add 1 cup of water, drained peas and salt. Cover and let it cook on medium heat for 20 minutes or until the peas are soft and the water has evaporated. Make sure to stir every 7 – 8 minutes.
Garnish with cilantro and adjust for salt and eat!
Makes enough for 2 people
