The bags are packed and we are ready to fly to India tomorrow. Before leaving, I wanted to get one recipe that is very quick and easy to make. Not only that, it is a tasty and healthy snack too.
When in India, I plan to learn a lot of recipes from my mom, who is an excellent cook. Also, I plan to go to the various restaurants and try to visit the kitchen so I can get a few recipes from them. Another of my plan is to take videos of how they make the various recipes and post it on the blog. Hope it all works out and I can come back with lots of new recipes. Until then, enjoy making the cashews.
Spicy Roasted Cashews
Ingredients:
1/2 lb raw whole cashews
1 teaspoon ghee (clarified butter)
1/2 teaspoon cayenne pepper
(1/4 teaspoon for less spicy)
1/2 teaspoon sea salt
1/2 teaspoon amchur (green mango powder) (optional)
Directions:
Set the oven to 350 F. In a cookie sheet, spread the raw cashews and let them roast for 15-20 minutes until they are lightly browned and roasted. Make sure to check every 5 minutes and re-spread the cashews.
Once the cashews are roasted and while they are still warm, transfer them to a bowl. Spread 1 teaspoon of ghee and shake the bowl so it is applied evenly. Add the salt, cayenne pepper and amchur powder and again shake the bowl so that it is applied evenly.
Let it cool and transfer to an airtight container.
Makes enough for 4 people

You can find it in Indian grocery stores. It is called Amchoor or Amchur powder.
